Anyone who's been watching me stream for any length of time will probably know that I positively adore tough, challenging games. So what makes the "grr, easy modes" crowd so frustrating is that none of it is taking away difficult games.
We're still extremely well catered to.
There's absolutely no shortage of hard as nails games, with some exceptionally good titles coming out constantly. Difficult, challenging experiences are under no danger of going away any time soon. Having accessibility options and easy modes aren't taking anything away.
The objection appears less about worries that folks who like a challenge won't be catered to any longer, but rather that others *are* being catered to. That's the real objection. It's a mentality that some Gamers™ should be catered to exclusively.
